Breakfast On The Go: Cacao Pistachio Overnight Oats

Breakfast is probably my favorite meal of the day -- It is also one of the best ways to jumpstart your morning!

A lot of us don't get to enjoy a hearty breakfast everyday because of work/busy schedules. However, there is a solution for that! I found a recipe for overnight oats and decided to give it a try. It was super easy to make and it tasted sooo good!

The best part of it is that you can make a batch and have a bomb breakfast-to-go for the week.

Here's the recipe (makes 4 servings):

2 cups of old fashioned oats

2 cups of unsweetened almond milk

1/4 cacao powder

1/4 pure maple syrup

3 Tbs chia seeds

1/2 cup pistachios; chop em up!

2 bananas; slice em up!

Step 1:

Chop up the pistachios and line the bottom of each jar with a thin layer of pistachios 

1/2 cup of pistachios

1/2 cup of pistachios

Step 2:

Add all of the ingredients (except for the pistachios and bananas) in a medium sized bowl.

2 cups of old fashioned oats

2 cups of old fashioned oats

2 cups of unsweetened almond milk

2 cups of unsweetened almond milk

1/4 cup of cacao powder

1/4 cup of cacao powder

1/4 cup of pure maple syrup

1/4 cup of pure maple syrup

2 Tbs of chia seeds

2 Tbs of chia seeds

Step 3:

Mix all of the ingredients until the consistency is smooth & creamy.

Step 4:

Pour the mixture in the jar half way and then top with pistachios (save some pistachios for the top layer).

Step 5:

Add remainder of mixture and top with remainder of pistachios.

Add chopped bananas to the top (I sprinkled the bananas with cinnamon as well)

Now all you have to do is pop the jars into the fridge and enjoy the next morning!
